Cooking Coarse is THE cooking course of online cooking videos designed to help make everyday cooking easier by concentrating on basic cooking methods to create your own healthy cooking recipes instead of following a food recipe from someone elses dinner recipe collection.     You have the CIA textbook and you’re asking ME? Wow, I’m flattered. I’ve actually never heard of separating eggs for an omelet. It seems like a lot of work to me. But, I do understand it. You’re right, the whites will hold a lot more air when whipped than if they were weighed down by the fatty yolks. It makes sense, whip the yolks and whites separately like a flourless cake. Give it a try and tell me how it goes.

    i’ve read from a book (CIA’s the professional chef) that to make the best omelette, u should seperate the yolk and whites, mix any seasoning in the egg yolk, then fold the egg white into the mixed yolk.

    do u know why we have to seperate the yolk and white? does it have to do with something abt the egg white toughen as u beat it?

    pls lemme know why and what u think abt making omelette this way.

    I like my yolks only slight cooked, so what i do is i cover the pan with a lid for like a minute or two so that the steam slightly cooks the top of the egg and the outside of the yolk.

    Cooking the yolk is a matter of personal preference. I don’t like a runny yolk. My 102 year old Grandmother was born in Wimbledon, and she used to do “toad-in-a-hole” with a runny yolk. Beat it, don’t beat it. That’s what makes cooking fun. You control everything. Cheers to you in the UK!

    Indeed, egg protein is perfect, nearly anyone who trains with weights eats as many eggs as they can stomach. Plus, a majority of the cholesterol is in the yolk. When I’m training I typically eat 4-6 egg whites a day with one yolk because it contains so many great nutrients.

    Some British cooks prefer to not beat the eggs prior to putting them in the pan, any thoughts on that? Having a British Mum I grew up preferring a more runny omlet or scramble, but she would beat them prior to cooking.
