    If you do not have any home oven , simple place the aubergine or plant into a toaster oven and toast ( bake ) till it is soft to the fork or knife.

    Then take then out . cool them for 3 minutes and scoop the soft toasted flesh out with a large spoon into a bowl dish.

    Mash it up with a fork , add in extra virgin olive oil , salt , lemon juice and a little mayo - for some creaminess and sweetness.

    You do not need tahini all the time - expensive stuff.
